Barbecue Bean Burgers
- 1/2 cup adzuki beans
- 1/2 cup black-eyed peas
- 6 tablespoons vegetable oil
- 1 onion, finely chopped
- 1 teaspoon yeast extract
- 3/4 cup grated carrot
- 1 1/2 cups whole wheat bread crumbs
- 2 tablespoons whole wheat flour
- 1 teaspoon salt
- 1/2 teaspoon pepper
- Sauce
- 1/2 teaspoon chili powder
- 1 teaspoon celery salt
- 2 tablespoons muscovado sugar
- 2 tablespoons red wine vinegar
- 2 tablespoons Worcestershire sauce (vegetarian)
- 3 tablespoons tomato paste
- 1 dash Tabasco sauce
- Soak beans and bring to a boil unless canned. Drain and rinse well.
- In mixing bowl, slightly mash beans and set aside.
- Heat 1 tablespoon oil in skillet and cook onion 3-4 minutes. Mix in beans, yeast, carrot, bread crumbs, and seasoning. Mix until binds well.
- With wet hands, divide into 6 parts and form into burgers. Put flour on a plate and coat burgers.
- For sauce, mix all ingredients until well blended.
- Cook burgers on grill 3-4 minutes each side, brushing with oil from time to time. Serve on buns with a spoonful of BBQ sauce.
