Healthy Hash Brown Casserole

  1. Preheat oven to 400F.
  2. In a skilllet cook bacon.
  3. Remove bacon from the skillet and set aside.
  4. Drain grease from pan and cook hash browns and white onion on medium high heat until heated through.
  5. Meanwhile mix the next 8 ingredients with the crumbled bacon, reserving 1/2 of the cheddar cheese.
  6. Mix in the hash browns and onions and spread the mixture into a greased baking dish.
  7. Top with remaining cheese and the crushed crackers.
  8. Bake until cheese is bubbly, about 15 minutes.
  9. Makes 6 servings at about 300 calories each.
