Healthy Hash Brown Casserole
- 6 slices Center-cut Bacon
- 23 packages Frozen Hash Browns (32 Ounce Package)
- 1/4 cups Diced White Onion
- 4 ounces, weight Fat-free Cream Cheese
- 1/4 cups Lite Sour Cream
- 1/4 cups Fat Free Chicken Broth
- 1/4 cups Green Onion, Diced
- 1 teaspoon Garlic Powder
- 1/2 teaspoons Paprika
- 1 cup 2% Milk Cheddar Cheese, Divided Use
- Salt And Pepper, to taste
- 5 whole Whole Wheat Ritz Crackers, Crushed
- Preheat oven to 400F.
- In a skilllet cook bacon.
- Remove bacon from the skillet and set aside.
- Drain grease from pan and cook hash browns and white onion on medium high heat until heated through.
- Meanwhile mix the next 8 ingredients with the crumbled bacon, reserving 1/2 of the cheddar cheese.
- Mix in the hash browns and onions and spread the mixture into a greased baking dish.
- Top with remaining cheese and the crushed crackers.
- Bake until cheese is bubbly, about 15 minutes.
- Makes 6 servings at about 300 calories each.
