Island Green Salad
- 14 cup fresh lime juice
- 2 tablespoons honey
- 1 tablespoon red wine vinegar
- 1 teaspoon bottled garlic, minced
- 14 cup olive oil
- salt and freshly ground black pepper
- 2 cups mangoes, cubed (may used frozen or defrosted or jarred)
- 1 12 lbs romaine lettuce, chopped
- 12 seedless cucumber, cubed
- Whisk together juice, honey, vinegar, and garlic.
- Add oil in a slow stream, whisking until emulsified.
- Season with salt and pepper.
- Toss together mangoes, romaine, and cucumber with dressing, to taste.
