Cheese and Chili Chicken
- 1 lb chicken tenders or 1 lb chicken breast, cut into strips
- 2 12 cups red chili beans, drained
- 1 (8 ounce) can diced tomatoes with green chilies
- 14 cup barbecue sauce
- 13 cup chicken stock
- 14 cup smoked cheddar cheese or 14 cup gouda cheese, grated
- Smear the grill seasoning over the chicken, then sear it in a medium hot non stick skillet coated with spray.
- Cook for about two minutes on each side.
- Reduce the heat to low, then add the beans, tomatoes barbecue sauce and stock and stir well.
- Simmer for about 10-15 minutes, stirring occasionally.
- Serve with the grated cheese on top.
