Potato, Sausage and Leek Gratin
- 4 cups red skinned potatoes diced
- 1 x salt and black pepper
- 2 tablespoons flour, all-purpose
- 1 x milk
- 1 x chives chopped
- 1 cup leeks chopped
- 1/2 cup scallions, spring or green onions chopped
- 1/2 pound smoked sausage
- 1/2 cup bread crumbs
- 1/4 cup butter cut into small pieces
- Spread 1/2 Potatoes, leeks and green onions in bottom of buttered casserole or baking dish.
- Sprinkle with salt, pepper and 1 1/2 tablespoons flour.
- Add sausage, hen spread remaining potatoes, leeks and green onions on top.
- Season to taste with salt and pepper.
- Sprinkle with remaining flour.
- Pour over enough milk just to cover mixture.
- Sprinkle bread crumbs over top.
- Dot with butter.
- Cover and bake at 375F (190C) until potatoes are tender, about 1 hour.
- Remove cover, and bake 15 to 20 minutes longer or until top is brown.
- Sprinkle with chopped chives just before serving.
