Sour Cream Rhubarb Pie Recipe
- 1 (9 inch) unbaked pie shell
- 1 1/4 c. cut rhubarb
- 1 c. lowfat sour cream
- 1 1/2 c. sugar
- 1 tbsp. flour
- 3 egg yolks, slightly beaten
- 6 tbsp. sugar
- 3 egg whites, beaten stiff
- Put rhubarb in pie shell.
- Mix lowfat sour cream, 1 1/2 c. sugar, flour, and egg yolks.
- Pour over rhubarb.
- Bake at 350 degrees for 1 hour.
- Cold slightly; add in 6 Tbsp.
- sugar gradually to beaten egg whites.
- Spread over pie and bake at 350 degrees for 20 min.
