Baby Lettuce and Cucumber Salad
- 2 tablespoons white wine vinegar
- 2 tablespoons chopped fresh dill
- Salt and freshly ground black pepper to taste
- 1/4 cup vegetable oil
- 6 cups (about 4 ounces) baby lettuce or mesclun
- 1 large cucumber, peeled, seeded, and diced
- To make the dressing: In a small bowl, whisk together the vinegar, dill, salt, and pepper.
- Add the oil and whisk to combine.
- In a large bowl, mix together the lettuce and the cucumber.
- Toss with the dressing before serving.
