Goat Cheese Brazil Nut Salad
- 1/4 cup balsamic vinegar
- 3 Tbsp. GREY POUPON Dijon Mustard
- 3 Tbsp. honey
- 4 oz. goat cheese, crumbled Target 2 For $5.00 thru 02/06
- 16 oz. LIGHT 'N LIVELY Twice the Calcium Fat Free Cottage Cheese
- 8 cups chopped romaine lettuce
- 4 medium red peppers, chopped
- 8 Brazil nuts, chopped
- 4 medium bananas
- 8 SNACKWELL'S Sugar Free Shortbread Cookies
- 4 On-the-Go packets
- 4 bottles of water, 20 fl oz
- In a small bowl mix vinegar, mustard, and honey; season to taste with favorite salt-free seasoning.
- In a separate medium bowl, blend crumbled goat cheese with cottage cheese.
- Lay 2 cups of lettuce on each of 4 plates; top each with one quarter of the cheese mixture.
- Arrange chopped red pepper in a circle around salads.
- Top each salad with one quarter of the nuts and drizzle with one quarter of the vinegar mixture.
- Complement each salad with a banana and 2 cookies.
- COMBINE CRYSTAL LIGHT On-the-GO packet with bottled water per package directions.
- Serve each person 1 water bottle with their meal.
