Goat Cheese Brazil Nut Salad

  1. In a small bowl mix vinegar, mustard, and honey; season to taste with favorite salt-free seasoning.
  2. In a separate medium bowl, blend crumbled goat cheese with cottage cheese.
  3. Lay 2 cups of lettuce on each of 4 plates; top each with one quarter of the cheese mixture.
  4. Arrange chopped red pepper in a circle around salads.
  5. Top each salad with one quarter of the nuts and drizzle with one quarter of the vinegar mixture.
  6. Complement each salad with a banana and 2 cookies.
  7. COMBINE CRYSTAL LIGHT On-the-GO packet with bottled water per package directions.
  8. Serve each person 1 water bottle with their meal.
