Garlic & Lemongrass Roast Chicken

  1. Wash and dry the chicken.
  2. Salt and pepper the cavity.
  3. Gently run your fingers between the breast and skin on both sides of the breastbone.
  4. Mix the butter, garlic, lemongrass, rosemary, salt and pepper.
  5. Take half the butter and stuff between the breast and skin.
  6. Massage gently to spread evenly.
  7. Repeat over the other side.
  8. Turn the wing tips back under the bird.
  9. Truss the legs together with kitchen twine.
  10. Rub a little olive oil over the skin of the chicken and sprinkle with salt and pepper.
  11. Roast at 350 for 1 to 1.5 hours.
  12. Let rest 15 minutes before slicing.
