How To Prepare Bitter Gourd So It Is Not Bitter
- 1 small Bitter gourd (goya)
- 3 pinch Salt
- Wash the bitter gourd well, and cut it in half lengthwise.
- Take out the seeds with a large spoon.
- Remove all of the white pulp.
- The thinner you cut it, the less bitter it will be.
- Sprinkle it generously with salt.
- Rub it well with your hands.
- Let it sit for a while.
- When you squeeze it, green juice will come out, like in the photo.
- The juice is bitter!
- Heat some water in a pot.
- Drain the green juice, then boil the goya.
- Lightly boil, and when it turns bright green, drain it in a colander.
- Use it in dishes like Goya salad or Goya stir-fried Okinawan style (goya chanpuru).
