Chicken-Style Tofu Fajitas

  1. Preheat the oven or toaster oven to 400F.
  2. Wrap the entire batch of tortillas in foil and warm while preparing the filling.
  3. Place the tofu strips on a plate and microwave briefly until warmed, 1 to 14 minutes.
  4. Spread a little salsa and yogurt down the center of each tortilla, and arrange a few tofu strips over them.
  5. Sprinkle with some lettuce, roll up snugly, and eat out of hand.
