Barbecued Black Eyes Recipe
- 1 c. dry black eyed peas
- 1 1/2 c. boiling water
- 1 teaspoon salt
- 1/4 pound grnd beef
- 1/2 med. onion, minced
- 1/2 c. commercial barbecue sauce
- 1 tbsp. prepared mustard
- 3 tbsp. brown sugar
- Cook peas in boiling water with salt till peas are barely tender, add in water if necessary.
- Pour off half of liquid.
- Brown grnd beef and onion; add in to peas.
- Stir in barbecue sauce, mustard and sugar.
- Bake at 200 degrees for 1 to 1 1/2 hrs.
- Yield: 4 to 6 servings.
