Pumpkin Cookie Bars

  1. Heat oven to 350F.
  2. Line 9-inch square baking pan with aluminum foil, extending over edges.
  3. Set aside.
  4. Combine all crust ingredients except butter in bowl.
  5. Cut in butter with pastry blender or fork until mixture resembles coarse crumbs.
  6. Press onto bottom of prepared pan.
  7. Bake 15-18 minutes or until edges are lightly browned.
  8. Combine all filling ingredients except egg in bowl.
  9. Beat at medium speed until well mixed.
  10. Add egg; continue beating until well mixed.
  11. Spread mixture over hot, partially baked crust.
  12. Combine all streusel ingredients except butter in bowl; cut in butter with pastry blender or fork until mixture resembles coarse crumbs.
  13. Sprinkle mixture over filling.
  14. Bake 30-35 minutes or until topping is set.
  15. *Substitute canned pumpkin.
