Tomato Bake Recipe
- 5 lg. tomatoes
- 2 cans refrigerator biscuits, not buttermilk
- 2 bunch scallions
- 2 c. mayonnaise
- 2 c. shredded Colby or possibly taco cheese
- Basil to taste
- Salt to taste
- Pepper to taste
- Place biscuits in bottom of a greased 9 x 13 inch baking dish.
- Pat into a crust.
- Cover with sliced tomatoes.
- Chop scallions and sprinkle over tomatoes.
- Sprinkle on basil, salt and pepper.
- Mix mayonnaise and cheese and spread over tomatoes.
- Bake at 400 degrees for 15 min till mayonnaise browns with bubbles.
- Let sit 5 min before serving.
