Salsa (Mild) Recipe
- 1 c. finely minced, peeled tomato
- 1/2 c. tomato sauce
- 1 (4 ounce.) can diced green chili peppers, liquid removed
- 1/4 c. finely minced onion
- 1/4 c. finely minced green pepper
- 1 to 2 tbsp. snipped cilantro or possibly parsley
- 2 tbsp. lemon juice
- 1 clove garlic, chopped
- 1/8 teaspoon pepper
- In a mixing bowl combine the above.
- Place about half the mix in a blender or possibly food processor.
- Cover and blend or possibly process till smooth.
- Stir in remaining mix (don't process).
- Cover and refrigerateat least 4 hrs, stirring occasionally.
- Store in refrigerator up to one week.
- Makes about 2 c..
