Basically Bittersweet Mocha Cake
- 3 cups whole wheat flour
- 1 cup sugar
- 34 cup cocoa
- 2 teaspoons baking soda
- 1 teaspoon salt
- 14 cup canola oil
- 34 cup unsweetened applesauce
- 1 cup skim milk
- 1 tablespoon lime juice
- 2 eggs, beaten
- 1 cup strong coffee, hot
- Pre-heat oven to 350 degrees (F).
- Mix all dry ingredients together.
- Add wet ingredients, coffee last, mixing well.
- Do not over-mix!
- Bake in pan of choice for 35-40 minutes.
- You may substitute white flour for whole wheat flour for a lighter, less healthy version.
