Basil Black Bean Salad
- 1 medium tomato, chopped
- 1/4 medium red onion, chopped
- 1 peeled garlic clove, chopped
- 1 tsp. dried basil leaves
- 3 Tbsp. balsamic vinegar
- 1 tsp. granulated sugar
- 2 tsp. extra virgin olive oil
- 1 Tbsp.
- 1 cup black beans cooked or canned without added salt
- 1 cup chopped romaine lettuce
- 1 kiwi
- 8 fl oz (1 cup) fat-free milk
- Mix tomatoes, onions and garlic.
- Blend basil, vinegar, sugar and olive oil in small bowl.
- Mix the flaxseed into the olive oil mixture.
- Season as desired with your favorite salt-free seasoning.
- Pour over vegetables; toss.
- Stir black beans into mixture.
- To build salad, place black bean mixture over lettuce.
- Enjoy a kiwi with the salad.
- Serve a glass of milk with the meal.
