Quiche Lorrine . with a twist .
- 1 pastry
- 1 1/2 cup sifted plain flour .
- 90 grams butter or margarine .
- 1 egg
- 2 tbsp chilled water .
- 1 filling
- 4 rashers ,streaky bacon , rinds removed.
- 1 egg
- 3 egg yolks.
- 250 grams cream cheese ,softened.
- 2/3 cup cream .
- 1 salt and freshly ground pepper for seasoning .
- 3 tomatoes ,peeled and sliced .
- 1 cooked bacon twists - curls for garnish.
- place sifted flour into a bowl and rub in the butter or margarine into the flour mix with finger tips until mixture resembles breadcrumbs .
- combine the egg and water then add sufficient liquid to flour to form a dough .
- knead lightly on a floured surface.
- and chill for 30 minutes before using .
- roll out the pastry on a floured surface and use to line a 20cm flan ring .
- cut bacon rashers into 5mm wide strips and fry without any extra fat for 3 minutes .
- drain on absorbent kitchen paper , then arrange on the bottom of the flan case .
- beat the egg and egg yolks together ,add the cream cheese and continue beating until the mixture is smooth , season with salt and pepper to taste and pour the mixture over the bacon .
- arrange sliced tomato on top .
- bake in the centre of a hot oven 200'C for 20 minutes , then reduce the heat to moderate 180'C and bake for a further 10minutes or until firm .
- garnish with cooked bacon twists - curls .
