Quiche Lorrine . with a twist .

  1. place sifted flour into a bowl and rub in the butter or margarine into the flour mix with finger tips until mixture resembles breadcrumbs .
  2. combine the egg and water then add sufficient liquid to flour to form a dough .
  3. knead lightly on a floured surface.
  4. and chill for 30 minutes before using .
  5. roll out the pastry on a floured surface and use to line a 20cm flan ring .
  6. cut bacon rashers into 5mm wide strips and fry without any extra fat for 3 minutes .
  7. drain on absorbent kitchen paper , then arrange on the bottom of the flan case .
  8. beat the egg and egg yolks together ,add the cream cheese and continue beating until the mixture is smooth , season with salt and pepper to taste and pour the mixture over the bacon .
  9. arrange sliced tomato on top .
  10. bake in the centre of a hot oven 200'C for 20 minutes , then reduce the heat to moderate 180'C and bake for a further 10minutes or until firm .
  11. garnish with cooked bacon twists - curls .
