Lamb and Pear Tagine.
- 2 each onions large, ,
- 1 kg lamb leg or shoulder cut into 4cm cubes.
- 4 each pears cored and cut into 4cm chunks
- 1/2 cup golden raisins sultanas
- 1/2 cup almonds silvered
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon coriander ground
- 1 teaspoon ginger ground
- 1 teaspoon cinnamon
- 1 teaspoon black pepper
- 1 x water to cover the meat
- 1 x salt to taste
- In a large saucepan gently fry the onion in the olive oil until soft, add the spices.
- Add the pears to the meat together with the sultanas and almonds.
