Amatriciana Sauce

  1. Heat oil in a medium size heavy saucepan over medium-high heat.
  2. Add the onions, and saute for 10 minutes.
  3. Stir in the bacon and garlic, and saute for 5 minutes more.
  4. Stir in the tomatoes, sugar and wine.
  5. Season to taste with salt and pepper.
  6. Simmer, uncovered, for 45 minutes, stirring occasionally.
