Buffalo Taco Meat Recipe
- 2 c. diced onion
- 2 c. diced green pepper
- 1/2 c. vegetable oil
- 5 lb regular-grind buffalo
- 5 lb course-grind buffalo
- 6 c. water
- 1/4 c. chili pwdr
- 4 Tbsp. cumin
- 2 Tbsp. granulated garlic
- 1/2 c. Tabasco brand Pepper Sauce
- 3 Tbsp. salt
- 16 ounce refried beans
- Place onion and green pepper in a large brassier and saute/fry in vegetable oil over medium-high heat till onions caramelize.
- Place buffalo meat, water and all the seasonings, including the Tabasco brand Pepper Sauce, in the pan.
- With a wire whip, breakup the meat till it is loose.
- Add in the refried beans and bring to a simmer.
- Braise the buffalo taco meat for about 2 to 3 hrs over a low heat or possibly till the meat is tender and the sauce has thickened.
