Chile Relleno Bake (Mexican) Recipe
- 1 pound grnd beef
- 1/2 c. minced onion
- 1/4 teaspoon black pepper
- 4 Large eggs, beaten
- 1 1/2 c. grated sharp cheddar cheese
- 1 1/2 c. lowfat milk
- 1/4 c. flour
- 1 teaspoon salt
- 2 (4 ounce.) cans green chilies, minced
- Dash Tabasco sauce
- Preheat oven to 350 degrees.
- In large skillet, brown beef and onion.
- Drain off grease if necessary.
- Stir in 1/2 tsp.
- salt and the pepper.
- Spread half the green chilies in a 10 x 6 x 2 inch baking dish and sprinkle with half the cheese.
- Top with meat mix and the remaining chilies and cheese.
- Combine lowfat milk, flour, Large eggs, Tabasco and remaining salt and healthy pinch of pepper.
- Beat till smooth.
- Pour over ingredients in casserole.
- Bake 50 to 60 min till inserted knife comes out clean.
- Serve with green or possibly red taco sauces, if you like.
