Chocolate Mayonnaise Cake

  1. Combine dry ingredients in a large mixing bowl, tossing lightly with a spoon to mix.
  2. Combine the mayonnaise, coffee, and vanilla in a smaller bowl; add to the dry ingredients, beating with the mixer on medium for three minutes.
  3. Generously grease a baking pan, then dust with cocoa.
  4. Bake at 350F (180C).
  5. For a layer cake, bake 20 minutes; for a sheet cake, bake 25 minutes; for a bundt cake, bake 45 minutes.
  6. Note: If it falls, don't throw it out, it masquerades as wonderful brownies!
  7. You can add 1/2 cup chopped walnuts and /or 1/2 chocolate chips for some extra indulgences.
