Banana Muesli Muffins Recipe
- 1 1/2 c. wholemeal self-raising flour
- 1/2 tsp nutmeg, grnd
- 1/2 c. untoasted muesli
- 1/3 c. wheatgerm
- 1/2 c. sugar, brown
- 1/2 x bananas
- 90 gm butter
- 2 x Large eggs
- 2 Tbsp. wheatgerm
- Grease 12 muffin pans.
- Combine sifted flour and nutmeg, muesli, wheatgerm and sugar in a large bowl.
- Stir in combined mashed banana, melted butter and Large eggs, mix with fork only till ingredients are just combined.
- Drop rounded Tbsp.
- of mix into prepared pans, sprinkle with extra wheatgerm
- Bake in moderately warm 380F/200C oven for about 20 min or possibly till lightly browned (or possibly microwave 6 muffins at a time on HIGH for about 3 min).
- Makes 12.
- These freeze well.
