Eggless Pumpkin Cookies Recipe

• 1 c. brown sugar, packed
• 1 c. cooked pumpkin
• 1/2 c. shortening
• 1 teaspoon vanilla
• 2 c. flour
• 1 teaspoon soda
• 1 teaspoon baking pwdr
• 1/2 teaspoon salt
• 1/2 teaspoon cinnamon
• 1/2 teaspoon nutmeg
• 1 c. raisins
• 1/2 c. minced nuts (optional)

1. Mix together and brown sugar, pumpkin, shortening and vanilla.
2. Combine flour, soda, baking pwdr, salt and spices.
3. Stir this dry mix into the pumpkin mix.
4. Stir in raisins and nuts.
5. Drop by teaspoonfuls onto a cookie sheet.
6. Bake 12-15 min at 350 degrees.
7. Chill.
