Cheese and Chive Souffles

  1. Grease 4 x 1 cup capacity souffle dishes, then coat the base and sides with cornflake crumbs, discard excess crumbs.
  2. Melt butter in a saucepan; add the flour and cook, stirring for 1 minute.
  3. Whisk in milk and cook, stirring, for 4-5 minutes or until sauce boils and thickens.
  4. Remove from heat and stir in yolks, cheese and chives.
  5. Season to taste and cool slightly.
  6. Beat egg whites until stiff peaks form then gently fold into cheese mixture, spoon into souffle dishes.
  7. Bake in a moderately hot 190 degrees C oven for 15-20 minutes or until well risen and golden.
  8. Serve immediately.
