Cheese and Chive Souffles
- 1/4 cup cornflake crumbs
- 60g butter
- 1/3 cup flour
- 1 3/4 cups milk
- 2 cups grated KRAFT Tasty Cheese
- 4 eggs, separated
- 1/2 cup chopped chives
- Salt and pepper, to taste
- Grease 4 x 1 cup capacity souffle dishes, then coat the base and sides with cornflake crumbs, discard excess crumbs.
- Melt butter in a saucepan; add the flour and cook, stirring for 1 minute.
- Whisk in milk and cook, stirring, for 4-5 minutes or until sauce boils and thickens.
- Remove from heat and stir in yolks, cheese and chives.
- Season to taste and cool slightly.
- Beat egg whites until stiff peaks form then gently fold into cheese mixture, spoon into souffle dishes.
- Bake in a moderately hot 190 degrees C oven for 15-20 minutes or until well risen and golden.
- Serve immediately.
