Green Chili Chicken Taquitos
- 1- 1/2 pound Frozen Boneless Skinless Chicken Breasts
- 1 package (about 1 Oz. Packet) McCormick Chicken Taco Seasoning
- 4 ounces, weight Can Green Chopped Green Chilis
- 1 cup Canola Oil
- 12 whole Flour Tortillas
- 1 cup Shredded Cheese
- I use this chicken for lots of different recipes.
- It is a great go-to recipe for anything Mexican.
- Begin by preparing the chicken earlier in the day.
- Add your frozen chicken breasts and the seasoning packet to a crock pot.
- Cook this on low about 6-8 hours.
- Add the green chilis and stir.
- Once it is cooked, you should be able to shred it with 2 forks.
- Putting it in the crockpot frozen allows it to make more juice, but you can put the chicken in thawed if you like.
- Now to assemble and cook the taquitos.
- Heat about 1 inch oil in large pan or pot.
- Warm your tortillas in the microwave and place about 2 tablespoons shredded chicken in each tortilla.
- Top with a little shredded cheese.
- Roll them tightly and place them seam side down in the hot oil; this will seal them.
- Turn once and remove to paper towels when lightly browned.
- Serve hot and reheat in the oven if eating later.
