Zesty Lime-Shrimp Quesadillas

  1. Pour 1/4 cup dressing over shrimp in bowl; stir to evenly coat shrimp.
  2. Refrigerate 30 min.
  3. to marinate.
  4. Drain shrimp; discard marinade.
  5. Heat remaining dressing in medium nonstick skillet on medium-high heat.
  6. Add shrimp, peppers and corn; cook and stir 3 min.
  7. Add cilantro; cook and stir 2 min.
  8. or until shrimp turn pink and peppers are crisp-tender.
  9. Remove from skillet.
  10. Carefully wipe skillet with paper towel.
  11. Spray tortillas with cooking spray; turn over.
  12. Top tortillas with shrimp mixture and cheese; cover with remaining tortillas, sprayed sides up.
  13. Cook, in batches, in same skillet on medium heat 2 to 3 min.
  14. or until quesadillas are golden brown on both sides and cheese is melted, turning after 1 min.
