AMIEs Strawberry Tart
- 1 1/2 cup all-purpose flour
- 1 tbsp sifted sugar
- 1/3 cup butter, softened
- 1/3 cup water
- 2 cup scalded fresh milk
- 1/3 cup sifted sugar
- 6 tbsp flour
- 4 egg yolks
- 1 tsp vanilla extract
- 2 cup fresh strawberries
- 1/4 cup water
- 1/2 apple or guava jelly (optional)
- Pastry: Mix together all the ingredients.
- Mix well.
- Press firmly into a ball.
- Roll out the dough and place into an 8" pie plate.
- Make several slits with fork near center to allow steam to escape during baking.
- Bake at 400AsF, until golden brown.
- Filling: Mix flour, sugar and eggs together forming a paste.
- Add vanilla and scalded milk.
- Cook to make a medium thick cream over a medium fire.
- Pour filling on cooled pie crust.
- Arrange strawberries on top.
- Dissolve jelly with water over a medium fire.
- Glaze the pie.
