Rice with Shrimp
- 2 cups long-grain white rice, uncooked
- 2 Tbsp. olive oil, divided
- 2 cups water
- 1 red onion, chopped
- 1 clove garlic, minced
- 1 lb. uncooked medium shrimp, peeled, deveined Safeway 1 lb For $8.99 thru 02/09
- 4 oz. OSCAR MAYER Boiled Ham, chopped
- 1 red pepper, cut into thin strips
- 2 Tbsp. lite soy sauce
- Cook and stir rice in 1 Tbsp.
- oil in medium saucepan on medium heat 1 min.
- Stir in water.
- Bring to boil; cover.
- Simmer on medium-low heat 20 to 25 min.
- or until rice is tender.
- Heat remaining oil in large skillet on medium-high heat.
- Add onions and garlic; cook and stir 2 min.
- Add shrimp, ham and peppers; cook 5 min.
- or until shrimp turn pink, stirring frequently.
- Stir in rice and soy sauce.
