Cloud 9 Butterscotch Squares(Serves 16)
- 1/2 c. margarine, softened
- 1 (3 3/4 oz.) butterscotch pudding mix (instant)
- 2 eggs, beaten
- 1 c. sifted, all-purpose flour
- 1 tsp. baking powder
- 1/2 c. milk
- 1 c. quick or old fashion oats (uncooked)
- 1 (6 oz.) pkg. chocolate pieces
- chocolate frosting
- Heat oven to 350u0b0.
- With mixer, beat margarine until creamy; add dry ingredients, pudding mix first.
- Add eggs and vanilla; mix well.
- Sift flour and baking powder together.
- In two additions of each, add milk, alternating with milk and dry ingredients.
- Begin with milk.
- Mix well with each addition.
- By hand, add oats and chocolate pieces.
- Spread in greased 9-inch square baking pan. Bake in preheated oven at 350u0b0 for 20 to 25 minutes.
- Cool completely on wire rack.
- Spread with chocolate frosting.
- Cut into 16 squares.
