Easy Shrimp and Veggie Stir-Fry
- 1 Tablespoon Extra Virgin Olive Oil
- 3 cloves Garlic, Minced Or Finely Chopped
- 1/2 cups Onion, Chopped
- 1 cup Broccoli, In Small Pieces
- 1 whole Red Pepper, Sliced
- 1 pound Cooked Shrimp (large Size)
- 2 whole Oranges, Small Size, For Juice And Zest
- 3 Tablespoons Teriyaki Sauce
- 1 teaspoon Brown Sugar
- In a large skillet or saute pan over medium high heat, saute the garlic and onions in the olive oil until they just start to soften, about 3 minutes.
- Add broccoli and red pepper and saute for another 5 minutes until they start to soften.
- Add the zest of the orange, the orange juice, the teriyaki sauce, and brown sugar.
- Continue cooking until the sauce is to your liking.
- At the last minute, add the shrimp and saute until they are heated.
- Do not overcook the shrimp.
- Serve over rice or pasta.
