Sour Cream Raisin Bars

  1. Preheat oven to 350F and press 12 cookies into the bottom of a lightly greased baking pan.
  2. Combine sour cream, sugar, egg yolks, and cornstarch into a saucepan.
  3. Cook over medium heat, stirring occasionally until the mixture comes to a boil.
  4. Gently boil and stir for one minute.
  5. Spread filling over pressed cookies.
  6. Break apart remaining cookies and place evenly over the mixture.
  7. Bake 25-30 minutes or until golden brown.
  8. Cool completely and cut into bars.
  9. Tip: for the raisin lovers, try adding extra raisins into the custard filling.
