Jennifer Garner's Shrimp and Orzo

  1. Cook orzo in boiling water according to package directions.
  2. Meanwhile, heat oil in a large skillet over medium heat.
  3. Add onion and garlic and cook, stirring, for 3 minutes or until onion is translucent.
  4. Add wine and cook 1 minute.
  5. Toss in drained tomatoes (reserve 1/2 cup juice).
  6. Break tomatoes into chunks.
  7. Add reserved juice, parsley, capers, oregano, basil, black pepper, and red pepper.
  8. Simmer 5 minutes.
  9. Add shrimp and cook 2 minutes or until shrimp become opaque.
  10. Add cooked orzo to skillet.
  11. Mix well.
  12. When pasta is thoroughly heated, stir in feta.
  13. Serve immediately.
