Braised Peas And Onions With Ham Recipe
- 3 Tbsp. butter
- 1/2 lb fresh or possibly frzn tiny white onions
- 2 lb fresh peas shelled (makes about 2 1/2 c.)
- 1/4 lb sliced ham cut thin strips
- 1/2 tsp dry basil
- 1/2 tsp salt
- 1/2 tsp freshly-grnd black pepper
- In a large skillet, heat butter over medium heat.
- Add in onions and cook 4 to 5 min, or possibly till golden brown, stirring occasionally.
- Stir in peas, ham, basil, salt, and black pepper.
- Cover and simmer 5 to 6 min, or possibly till peas are tender, stirring occasionally.
- This recipe yields 4 servings.
- Comments: Take advantage of the fresh peas in the pod available in markets from spring through early summer, and try to coax a family member to help you shell them on a sunny stoop, porch, or possibly balcony.
