Summer Vegetables In Vodka Marinade
- 1/4 cup fresh dill, rinsed and chopped
- 1/4 cup fresh Neapolitan parsley, rinsed and chopped
- 1 teaspoon celery seeds
- 1/4 cup vodka
- 2 tablespoons fresh lemon juice
- 5 carrots, peeled and julienned, 2 inches long
- 1/2 pound green beans, washed and trimmed
- 1 bunch scallions, white part only, washed and julienned, 2 inches long
- 2 medium-size red peppers, seeded and julienned, 2 inches long
- 2 medium-size yellow peppers, seeded and julienned, 2 inches long
- 1 quart cherry tomatoes, washed
- Combine all of the ingredients in a large bowl and mix well.
- Cover and refrigerate for a half hour.
- Pour off any liquid and transfer the vegetables to a clean bowl.
- Cover and refrigerate until ready to use.
