Chocolate Buttermilk Cake
- 2 cup All purpose flour
- 1 pinch salt
- 2 cup sugar
- 1/2 cup butter
- 1 cup water
- 1/2 cup oil
- 1/2 cup cocoa powder
- 2 large eggs
- 1/2 cup buttermilk
- 1 tsp bicarb soda
- 1/4 cup butter
- 3 tbsp cocoa powder, sifted
- 4 1/2 tbsp buttermilk
- 1 tsp vanilla essence
- 1 1/4 cup icing sugar, sifted
- Sift flour, sugar, salt and bicarb soda in a large mixing bowl.
- Heat the butter, water, oil and cocoa powder together in a small sauce pan.
- Bring to boil, remove from heat and cool.
- Pour cocoa mixture into the flour mixture and mix well.
- Whisk eggs and buttermilk together and add to cake mixture.
- Pour mixture into a greased 22cm pan.
- Bake at 180C for 25 to 30 minutes or until toothpick inserted in middle comes out clean.
- Remove from the oven and cool in the pan for 5 minutes before turning out on a wire rack.
- ICING
- Melt the butter in a bowl in the microwave for 1 minute.
- Remove and stir in the cocoa, buttermilk, vanilla essence and icing sugar.
- Mix until smooth, then spread over the cake.
