Mexican Brown Rice

  1. Spray a large iron skillet with vegetable spray.
  2. Add oil and water.
  3. Add rice and stir until rice is hot.
  4. Add more water if necessary.
  5. Add remaining ingredients, cover, reduce heat, and cook until liquid is absorbed, about 35-45 minutes.
