Vegi Chili Recipe
- 1/2 pound onion, minced
- 6 cloves garlic, minced
- 1/2 stalk celery
- 1/2 head green cabbage, minced
- 1/4 head, red cabbage, minced
- 4 carrots, sliced
- 4 zucchini, sliced
- 1 stalk broccoli, minced
- 1/2 head cauliflower
- 2 1/2 c. corn
- 4 c. kidney beans
- 2 tomatoes, sliced
- 1 pound mushrooms, sliced
- 3 teaspoon salt & pepper each
- 2 tbsp. Worcestershire sauce
- 4 c. tomato paste
- 1/2 c. butter
- Saute/fry veggies in butter till tender in large pot.
- Add in corn, salt, pepper and Worcestershire.
- Simmer 5 min.
- Add in kidneys and tomato sauce.
- Simmer 30-45 min.
- Makes 10 servings.
- Sprinkle Swiss and provolone cheese prior to serving on each bowl.
