Turkey Soup Parmentier Recipe
- 1 lg. diced onion
- 3 c. diced raw potatoes
- 3 c. turkey broth
- 2 tbsp. butter
- 1 1/2 c. light cream
- 1 1/2 c. lowfat milk
- 1/2 teaspoon sage
- 1/2 teaspoon thyme
- 2 c. finely diced turkey
- Dash of sherry wine
- Boil carcass till turkey falls off bones.
- Cook onions and potatoes in broth for 20 min.
- Add in butter, liquids, herbs, salt, and pepper to taste.
- Add in turkey and heat.
- Serve with sprinkling of paprika, parsley, and croutons.
