Eggnog
- 10 eggs
- 6 teaspoons vanilla extract
- 6 teaspoons almond extract
- 1 cup superfine sugar
- 3 cups heavy cream
- 20 ounces rum (Dark)
- nutmeg
- cinnamon
- Separate the eggs.
- Mix the whites with vanilla and almond extract, and beat into stiff peaks.
- Mix the yolks with half the sugar.
- Mix the cream with remaining sugar, and beat into stiff peaks.
- Carefully fold the yolks into the whites.
- Fold the cream into the egg mixture.
- To make each serving, fold 2 ounces spirit into 1/10 of the mixture.
- Pour over a few ice cubes in a cocktail glass.
- Garnish with nutmeg and cinnamon.
