French Langues De Chat (Cat's Tongues)
- 9 tbsp. sweet butter, softened
- 10 tbsp. sugar
- 3 egg whites
- 1-1/2 cup flour
- 1-1/2 tsp. vanilla extract
- 6 (1 oz. each) squares semisweet chocolate, melted
- Cream butter and sugar together.
- Add egg whites, one by one, mixing well after each addition.
- Add flour and vanilla.
- If dough seems too soft, add more flour.
- Force through a pastry bag or cookie press with a medium star tip onto lightly buttered cookie sheets.
- Make each cookie about 3 inches long.
- Bake at 400 F. until straw-colored (about 10 minutes).
- When cool, dip one end of each cookie in 4 - 6 squares melted chocolate and place on wax paper until chocolate hardens.
- Store in a cool place.
- Makes 6 dozen
