California Quiche Recipe
- 1 lb summer squash (zucchini, yellow or possibly mixed), or possibly minced Swiss chard or possibly mixed squash and greens, minced.
- 1/2 x onion, thinly sliced
- 4 x egg substitute (about 1 c.)
- 1 1/2 x - 2 c. grated cheese (sharp cheddar or possibly Swiss)
- 1/2 tsp each dry oregano, basil salt and pepper to taste
- Steam minced squash and onion about 15 min in about 1 inch of water; drain well.
- Meanwhile beat the Large eggs and cheese together.
- Mash squash (do not puree as chunks are good) and add in to the Large eggs.
- Add in salt, pepper, oregano, basil.
- Pour into a "sprayed" baking dish and bake covered in 325F ovenuntil set - about 30 to 40 min.
- Serves 4.Optional Fillings for Quiche1 c. mushrooms, sliced, steamed or possibly sauted 1/2 onion, thinly sliced, steamed or possibly sauted 1 c. minced broccoli, steamed or possibly sauted 4 Large eggs or possibly 1 c. egg substitute1 1/2 to 2 c. grated cheese1 tsp nutmegsalt & pepper to taste.
- Beat Large eggs with cheese.
- Arrange broccoli, mushrooms & onion in sprayed baking dish.
- Pour over veggies and bake covered in 325F oven till set - about 30 to 40 min.
- Serves 4.NOTE: Leftover quiche makes a great quick breakfast.
- Nuke for 1 minute and eat.
- NOTE: Any vegetables you like can be steamed or possibly sauted and added to quiche.
