Lighter Bacon Cheeseburger Meatloaf
- 6 slices Bacon
- 1 pound Lean Ground Beef
- 1 cup Shredded Cheddar Cheese
- 1 whole Egg
- 1/4 cups Plain Bread Crumbs
- 1/4 cups Minced Onion
- 2 Tablespoons Mayonnaise
- 2 Tablespoons Milk
- 1 Tablespoon Worcestershire Sauce
- 1/2 cups Finely Chopped Dill Pickle, Divided
- 4 Tablespoons Ketchup
- 1 Tablespoon Mustard
- Cook bacon until slightly crisp using whatever method you prefer then drain it and chop it very finely.
- I like to bake mine at 375 F for 15 minutes.
- It should be slightly crispy.
- Preheat oven to 350 F.
- In a medium bowl combine bacon, ground beef, cheddar cheese, egg, breadcrumbs, onion, mayonnaise, milk, Worcestershire sauce and half of the dill pickle.
- Press the meat mixture into a standard size loaf pan that youve sprayed with cooking spray.
- In a small bowl, combine the ketchup and mustard.
- Spread this over the top of the meatloaf.
- Sprinkle the rest of the dill pickle on top.
- Bake for 50 minutes, or until meatloaf is cooked through.
- Drain grease before serving if desired (be careful to not let toppings slide off).
