Spaghetti Ala Carbonara(To Serve 4 People Generously)
- 4 Tbsp. soft butter
- 2 whole eggs
- 2 egg yolks
- 1 c. good Parmesan cheese
- 6 to 8 qt. water
- 1 Tbsp. salt
- 2 garlic cloves
- 1/2 c. heavy cream
- 1 lb. spaghetti, fettucini, linguine, etc.
- 8 slices crisply fried bacon
- 1 tsp. or less dried red pepper flakes
- freshly ground black pepper
- chopped parsley
- 1/2 c. minced green onions
- 3 lb. beef boneless eye of round
- 1/2 lb. spiced sausage
- 1/2 lb. cooked ham, chopped
- 2 Tbsp. olive oil
- 1 medium onion, chopped
- 1 large green pepper, coarsely chopped
- 1/4 c. sweet pimento, diced
- 1/4 c. stuffed olives (Spanish)
- 1/2 c. Spanish cooking wine
- 1 tsp. oregano leaves
- 1 tsp. salt
- 1/4 tsp. pepper
- 2 bay leaves
- 4 large carrots, sliced thick
- 6 medium potatoes, peeled and cut into quarters
- 8 oz. whole tomatoes with puree
- Cut a narrow (1-inch) X-shape all the way through beef roast with long, thin sharp knife.
- Fill X-cut with sausage, ham and pimento.
- Heat oil in Dutch oven until hot.
- Cook beef over medium heat until brown on all sides, about 15 minutes.
- Drain fat.
- Add remaining ingredients.
- Heat to boiling; reduce heat, cover and simmer until beef is tender (about 2 hours).
- Remove bay leaves. Slice beef; arrange on plate.
- Skim fat from sauce.
- Pour some sauce over beef.
- Serve with white or Spanish rice.
- Serve 8 to 10.
