The Best Potato Kugel Recipe
- 10 med. potatoes, peeled
- 4 lg. onions
- 4 Large eggs
- 1/2 c. matzo meal
- 1/2 c. peanut oil
- salt and pepper to taste
- In a food processor, finely mince 2 onions (you can use the large shredding disc.
- Fry the onions in warm oil till very brown, but not crispy.
- Grate potatoes using the same shredding disc.
- Grate 5 of the potatoes using the shredding disc.
- Set aside in a separate large bowl.
- Remove shredding disc and fit the food processor with the chopping blade.
- Add in the 2 onions and puree (no need to clean food processor before adding onions!)
- Add in the 5 potatoes, fried onions and matzo meal and pulse repeatedly till the potatoes are coarsely minced.
- Add in the Large eggs and pulse till combined.
- Combine contents of food processor with the grated potatoes in the bowl and mix well.
- Bake in large glass pan at 400
