Senatorial Bean Soup
- 1 teaspoon olive oil
- 1 large onion, chopped
- 1 lb dried navy beans, rinsed and sorted
- 10 cups water
- 12 lb deli ham, slab, cubed
- 1 12 teaspoons salt
- 12 teaspoon pepper
- Warm the oil in a 4-qt.
- pot over medium heat.Saute the onion until tender.
- Add the beans, water and ham.
- Bring to a boil, then simmer for 1 1/2 to 2 hours or until beans are tender.
- Add salt and pepper.
- Using a potato masher, squish some of the beans in the soup.
