Senatorial Bean Soup

  1. Warm the oil in a 4-qt.
  2. pot over medium heat.Saute the onion until tender.
  3. Add the beans, water and ham.
  4. Bring to a boil, then simmer for 1 1/2 to 2 hours or until beans are tender.
  5. Add salt and pepper.
  6. Using a potato masher, squish some of the beans in the soup.
