Brown loaf/ baps
- 1 lb strong brown flour
- 1 tsp salt
- 2 oz lard
- 2 tsp granulated sugar
- 1 oz fresh yeast
- 10 oz warm water and milk combined
- Sift the flour and salt into a large mixing bowl and rub into the fat until it resembles breadcrumbs, add half the sugar
- Cream the yeast with the rest of sugar and add to the warm liquid, leave until frothy ( about 5 minutes) pour the liquid into the flour and work to a soft dough.
- Turn out onto a floured surface and kneed until smooth and elastic (10 minutes)
- Place in a lightly oiled bowl cover with a clean tea bowl (I use a shower cap) and leave to rise in a warm place for an hour
- Knead the dough again and shape into a loaf ( or divide into 6 pieces if making baps) and place onto a baking sheet, cover with a warm place and leave to prove for 20 minutes.
- Set the oven to, 220 sprinkle loaf or bags with a little flour and bake for 15/20 minutes.
