Tex-Mex BBQ Chicken Stack

  1. Heat oven to 350F.
  2. Mix first 3 ingredients until blended.
  3. Reserve 2 Tbsp.
  4. barbecue sauce mixture for later use.
  5. Cook and stir onions in large nonstick skillet on medium heat 4 to 5 min.
  6. or until crisp-tender.
  7. Add chicken and remaining barbecue sauce mixture; stir.
  8. Simmer on medium-low heat 2 to 3 min.
  9. or until heated through, stirring occasionally.
  10. Cover baking sheet with foil; spray with cooking spray.
  11. Place 1 tortilla on prepared baking sheet; top with half the chicken mixture and 1/2 cup cheese.
  12. Cover with second tortilla.
  13. Top with layers of remaining chicken, 1/2 cup of the remaining cheese and remaining tortilla.
  14. Spread with reserved barbecue sauce mixture; sprinkle with remaining cheese.
  15. Cover loosely with second sheet of foil.
  16. Bake 15 min.
  17. or until heated through.
  18. Let stand 5 min.
  19. before cutting into wedges.
  20. Serve with sour cream.
