Golden Potato Bake
- 1/3 c. sour cream
- 2 Tbsp. half and half (blend of cream and milk)
- 2 oz. Cheddar cheese, shredded
- 1/4 c. chopped scallions (green onions)
- 1 tsp. chopped fresh parsley
- dash of white pepper
- 3/4 lb. pared cooked all-purpose potatoes, grated
- 2 tsp. margarine, melted
- 1 Tbsp. plain dried breadcrumbs
- 1 tsp. grated Parmesan cheese
- Preheat oven to 450u0b0.
- In small saucepan combine sour cream and half and half and cook over medium heat until heated through (do not boil).
- Stir in Cheddar cheese, scallions, parsley and pepper and continue cooking, stirring frequently, until cheese melts.
- In medium mixing bowl combine potatoes and cheese mixture and mix well.
- Spread margarine over bottom of 9-inch pie pan; turn potato mixture into pie pan and spread evenly over bottom of pan.
- In cup or small bowl combine breadcrumbs and Parmesan cheese; sprinkle over potato mixture.
- Bake until potato mixture is heated through, 20 to 25 minutes.
- Turn oven control to broil, and broil until topping is lightly browned, 1 to 2 minutes.
- Makes 4 servings.
